Limes and lemons
Limes and lemons were never in my kitchen. When recipes called for it I just left it out. What would a dash of this, a squeeze of that, matter in the volume and the mass of it all?
Graham Chapman from Monty Python did not do the work. He did not write the sketches. He did not put in the hours. Chapman just said, "that should be about a dead parrot" and actively worked against having punchlines in sketches. In the volume and the mass of it, Chapman did not do anything.
My food came alive when I learned this: Acid can rarely be specifically tasted, but without it, the balance is off.
In the volume and the mass of it all: It is the balance bringers that wakens up new possibilities.
