Spaghetti bolognese

Spaghetti bolognese does not exist in Italy, "Ragù alla Bolognese" does.

In 1982, the Italian Academy of Cuisine wrote down a recipe which became the canonical recipe. It had no tomatoes. Milk was required.

The world continued despite this fact, and most sauces made in this style gained tomatoes. In 2023 the canonical recipe was updated: It now includes tomatoes, and milk is optional.

Despite this fact, the world continues.
